Raw Zucchini White Parmigiana Parmigiana Bianca di Zucchine
Ingredients:
- 3–4 medium zucchini (thinly sliced lengthwise)
- 150g ham (prosciutto or cooked ham)
- 200g mozzarella cheese (sliced or shredded)
- 50g grated Parmesan cheese
- 2 tbsp olive oil
- 1 garlic clove (optional)
- Salt & black pepper (to taste)
- Fresh basil or parsley (optional)
Instructions:
- Prepare the zucchini
Wash and slice the zucchini into thin strips (using a knife or mandoline).
Optional: Sprinkle a little salt and let them sit for 10 minutes, then pat dry (this removes excess water). - Preheat the oven
Set your oven to 180°C (350°F). - Prepare the baking dish
Lightly grease a baking dish with olive oil and rub it with garlic for extra flavor. - Layer the ingredients
- First layer: zucchini slices
- Add ham
- Add mozzarella
- Sprinkle a bit of Parmesan
Repeat the layers until everything is used, finishing with cheese on top.
- Season
Add a drizzle of olive oil, black pepper, and a little salt if needed. - Bake
Bake for 30–35 minutes until golden and bubbly on top. - Rest & serve
Let it rest for 5–10 minutes before serving so it sets nicely.
Tips:
- You can add ricotta for extra creaminess
- For a vegetarian version, skip the ham
- Grill the zucchini first if you want a stronger flavor
