 OKLAHOMA NUT CANDY

(Old-fashioned Aunt Bill’s Brown Candy)

 Ingredients

  • 3 cups granulated sugar
  • 1 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon baking soda
  • 1/2 cup pecans
  • 1/2 cup walnuts (or use all pecans)

This candy is known for its rich caramel flavor + crunchy nuts.

 Instructions

1. Prepare

  • Line a baking pan with parchment paper and lightly grease it.

2. Toast the nuts

  • In a dry pan, toast pecans and walnuts for about 5 minutes until fragrant.
  • Set aside.

3. Cook the caramel

  • In a saucepan, add sugar + cream.
  • Cook over medium heat, stirring until sugar dissolves.
  • Continue cooking until it thickens and turns a deep caramel color.

4. Add butter & vanilla

  • Remove from heat.
  • Stir in butter and vanilla until smooth.

5. Add baking soda

  • Mix in baking soda (this helps create a lighter texture).

6. Add nuts

  • Stir in toasted nuts until evenly coated.

7. Set the candy

  • Pour mixture into prepared pan.
  • Let it cool completely (about 2 hours).

8. Cut & serve

  • Cut into small squares or bars. Tips
  • Don’t rush the cooking — slow caramel = best flavor.
  • Use a candy thermometer if possible (soft-ball stage ≈ 115°C).
  • You can add chocolate on top for extra taste.

  • Soft, chewy caramel

  • Crunchy from nuts
  • Similar to pralines or caramel fudge
