Mini Meatloaf Muffins
Ingredients:
- 1 lb (450g) ground beef (or ground turkey)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
Glaze (optional but recommended):
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tsp mustard
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a muffin tin or line with paper cups.
- Mix ingredients
In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined (don’t overmix). - Fill the muffin tin
Divide the mixture evenly into 10–12 muffin cups, pressing lightly to shape. - Add glaze
Mix glaze ingredients and spoon a little on top of each mini meatloaf. - Bake
Bake for 20–25 minutes, or until fully cooked (internal temp 160°F / 71°C). - Rest & serve
Let them cool for a few minutes before removing. Serve warm!
Tips:
- Add shredded cheese inside for a gooey center.
- Swap beef for chicken or turkey for a lighter option.
- Great with mashed potatoes or roasted veggies.
