 Poor Man’s Husband Casserole

A hearty, budget-friendly casserole that’s rich, filling, and perfect for busy weeknights. Simple ingredients, big comfort!

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 12 oz egg noodles
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning (optional)

 Instructions:

  1. Cook the noodles
    Bring a large pot of salted water to a boil and cook the egg noodles according to package directions. Drain and set aside.
  2. Prepare the meat mixture
    In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft.
    Add the garlic and cook for about 1 minute until fragrant. Drain excess grease.
  3. Add sauce and seasoning
    Stir in the tomato sauce, salt, pepper, and Italian seasoning. Let it simmer for 5 minutes.
  4. Make the creamy layer
    In a bowl, mix together the cream of mushroom soup and sour cream until smooth.
  5. Assemble the casserole
    Preheat your oven to 180°C (350°F).
    In a greased baking dish:

    • Layer half of the cooked noodles
    • Spread half of the sour cream mixture
    • Add half of the meat mixture
    • Sprinkle some cheese
      Repeat the layers, finishing with cheese on top.
  6. Bake
    Bake uncovered for 25–30 minutes, or until hot and bubbly and the cheese is melted and slightly golden.

 Tips:

  • Add vegetables like bell peppers or mushrooms for extra flavor.
  • Swap cheddar for mozzarella for a stretchier texture.
  • Let it rest 5–10 minutes before serving for cleaner slices.
