Mini Beef Sausage Pancake Bites

Mini Beef Sausage Pancake Bites

Ingredients

  • 2 cups Aunt Jemima Complete Buttermilk Pancake Mix
  • 1 1/3 cups water (or as directed on the pancake mix package)
  • 12 oz beef sausage, cut into bite-sized pieces
  • 1 tablespoon melted butter (optional)
  • Cooking spray or a little oil for greasing
  • Maple syrup, for serving

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin pan with cooking spray.
  2. Prepare the pancake batter: In a medium bowl, combine the pancake mix and water. Stir until just combined. Avoid overmixing; a few small lumps are fine.
  3. Prepare the sausage: Cut the beef sausage into small, bite-sized pieces. If using raw beef sausage, cook it thoroughly in a skillet before adding it to the batter.
  4. Fill the muffin pan: Spoon the pancake batter into the prepared mini muffin cups, filling each about halfway. Place a piece of sausage in the center of each cup, then cover with a little more batter if needed.
  5. Bake: Bake for 12–15 minutes, or until the pancake bites are golden and cooked through. Cooking time may vary depending on the size of your muffin pan.
  6. Cool slightly: Let the pancake bites rest in the pan for a few minutes before carefully removing them.
  7. Serve: Serve warm with maple syrup for dipping.

Tips

  • Use fully cooked beef sausage for easier preparation.
  • Do not overfill the muffin cups, as the batter will rise while baking.
  • Add a pinch of cinnamon or a little shredded cheese to the batter for a different flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat before serving.

Serving Suggestion

These mini pancake bites are perfect for breakfast, brunch, lunchboxes, or a quick snack. Their sweet pancake exterior and savory beef sausage center make them a fun, bite-sized treat for the whole family.
