Cheesy Hot Pastrami Sliders

These Cheesy Hot Pastrami Sliders are loaded with savory pastrami, melted Swiss cheese, and a buttery garlic topping, all tucked into soft Hawaiian rolls. They’re perfect for game days, family gatherings, parties, or an easy weeknight dinner.

Ingredients

  • 12 Hawaiian sweet rolls
  • 1 lb sliced pastrami
  • 8 slices Swiss cheese
  • ½ cup dill pickle slices
  • ¼ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon poppy seeds
  • ½ teaspoon onion powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a baking dish.
  2. Prepare the Rolls: Slice the Hawaiian rolls horizontally without separating the individual rolls. Place the bottom half in the prepared baking dish.
  3. Add the Sauce: Mix the mayonnaise and Dijon mustard in a small bowl. Spread the mixture evenly over the bottom rolls.
  4. Layer the Fillings: Arrange half of the Swiss cheese over the rolls. Add the sliced pastrami, followed by the dill pickle slices. Top with the remaining Swiss cheese.
  5. Cover the Sliders: Place the top half of the rolls over the fillings.
  6. Prepare the Butter Topping: In a small bowl, combine the melted butter, garlic powder, Worcestershire sauce, onion powder, and poppy seeds.
  7. Brush the Rolls: Brush the butter mixture generously over the tops of the rolls.
  8. Bake: Cover the baking dish with aluminum foil and bake for 15 minutes. Remove the foil and bake for another 5–10 minutes, until the tops are golden brown and the cheese is completely melted.
  9. Serve: Let the sliders rest for a few minutes, sprinkle with fresh parsley if desired, then separate and serve warm.

Tips for the Best Sliders

  • Use freshly sliced pastrami for the best flavor and texture.
  • Add extra Swiss cheese if you love a gooey, cheesy filling.
  • For extra tanginess, add more dill pickles or a little extra Dijon mustard.
  • Keep the sliders covered during the first part of baking to prevent the rolls from drying out.
  • Serve with potato chips, coleslaw, or a bowl of warm soup.

Serving Suggestions

These hot pastrami sliders are best served straight from the oven while the cheese is melted and the rolls are warm. They’re an easy crowd-pleaser that everyone will want seconds of!
