Hobo Casserole with Ground Beef
This hearty Hobo Casserole is an easy, comforting family dinner made with seasoned ground beef, tender potatoes, onions, and plenty of melted cheese. Everything comes together in one casserole dish for a simple meal that’s perfect for busy weeknights.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4–5 medium potatoes, thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 cup shredded cheddar cheese
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp garlic powder
- 1 tbsp Worcestershire sauce
- 1 tbsp olive oil
Directions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Brown the beef: Heat olive oil in a skillet over medium heat. Add the ground beef and chopped onion. Cook until the beef is browned and the onion is tender. Drain any excess grease.
- Add the minced garlic, salt, pepper, paprika, garlic powder, and Worcestershire sauce. Cook for another minute.
- Prepare the sauce: In a bowl, whisk together the cream of mushroom soup and milk until smooth.
- Layer the casserole: Arrange half of the sliced potatoes in the baking dish. Spread half of the beef mixture over the potatoes, then repeat with the remaining potatoes and beef.
- Pour the cream sauce evenly over everything and cover the dish tightly with aluminum foil.
- Bake for 45–55 minutes, or until the potatoes are tender when pierced with a fork.
- Remove the foil and sprinkle the cheddar cheese evenly over the top. Return to the oven for another 10–15 minutes, until the cheese is melted and bubbly.
- Let the casserole rest for about 5–10 minutes before serving.
Tip: Slice the potatoes as evenly and thinly as possible so they cook at the same rate.
