No-Bake Cranberry Pecan Praline Cookies
Sweet, chewy, and packed with crunchy pecans and tart dried cranberries, these easy no-bake cookies are the perfect treat when you want something delicious without turning on the oven.
Ingredients
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1 1/2 cups chopped pecans
- 1 cup dried cranberries
- 2 1/2 cups quick-cooking oats
- 1/4 tsp salt
Instructions
- Line a baking sheet with parchment paper.
- In a medium saucepan, combine the granulated sugar, brown sugar, butter, heavy cream, and salt.
- Heat over medium heat, stirring frequently, until the mixture comes to a gentle boil. Boil for about 2 minutes, stirring constantly.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Quickly add the oats, chopped pecans, and dried cranberries. Stir until everything is evenly coated with the praline mixture.
- Drop spoonfuls of the mixture onto the prepared baking sheet, gently shaping them into cookies.
- Let the cookies cool at room temperature for 30–45 minutes, or until completely set.
- Store in an airtight container at room temperature.
Tip: For firmer cookies, refrigerate them for about 20–30 minutes before serving.
