Ingredients
- 3 cups cooked and chilled long-grain white rice
- 450 g boneless, skinless chicken breast, cut into small bite-sized pieces
- 2 tablespoons vegetable oil, divided
- 1 small yellow onion, finely diced
- 2 carrots, peeled and finely diced
- 1 cup frozen peas
- 2 large eggs, lightly beaten
- 3 green onions, sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- ½ teaspoon ground black pepper
- ½ teaspoon salt, or to taste
Instructions
1. Prepare the Rice
For the best fried rice, use rice that has been cooked and completely chilled. Cold, day-old rice works especially well because the grains stay separate when stir-fried.
Break up any large clumps of rice before cooking.
2. Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken pieces and season lightly with salt and black pepper. Cook for 5–7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
