- 12 oz (340 g) elbow macaroni
- 2 tablespoons unsalted butter

- 2 cups (480 ml) whole milk
- 1 cup (240 ml) evaporated milk
- 8 oz (225 g) Velveeta, cut into small cubes
- 1½ cups (150 g) shredded sharp Cheddar cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon paprika, optional
- 2 tablespoons grated Parmesan cheese, optional
Instructions
1. Cook the Macaroni
Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions until just al dente.
Drain well and set aside.
2. Make the Roux
Place a large skillet or saucepan over medium heat. Melt the butter.
Sprinkle in the flour and whisk continuously for about 1–2 minutes, until smooth and lightly cooked.
3. Add the Milk
Slowly pour in the whole milk and evaporated milk while whisking constantly.
Continue cooking for 3–5 minutes, stirring frequently, until the mixture begins to thicken slightly.
4. Add the Cheese
Reduce the heat to low.
Add the cubed Velveeta and shredded cheddar a little at a time, stirring until completely melted and smooth.
Add the garlic powder, onion powder, salt, black pepper, and paprika if using.
5. Combine with the Pasta
Add the cooked macaroni to the cheese sauce.
Stir gently until every piece of pasta is completely coated in the creamy sauce.
If the sauce is thicker than you prefer, add a small splash of warm milk and stir until it reaches the desired consistency.
6. Finish and Serve
Stir in the Parmesan cheese if using.
