No-Bake Peanut Butter Cheesecake Balls
These No-Bake Peanut Butter Cheesecake Balls are creamy, rich, and incredibly easy to make. With a buttery graham cracker base, smooth peanut butter, and a sweet cheesecake filling, they make the perfect bite-sized dessert for holidays, parties, or whenever you’re craving something sweet.
Ingredients
- 1 ½ cups (about 150 g) graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 8 oz (225 g) cream cheese, softened
- ½ cup creamy peanut butter
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chocolate chips, for coating
- 1 teaspoon vegetable or coconut oil, optional
Instructions
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly moistened.
- In a separate bowl, beat the softened cream cheese until smooth and creamy.
- Add the peanut butter, powdered sugar, and vanilla extract. Beat until fully combined and smooth.
- Add the graham cracker mixture to the peanut butter cheesecake mixture. Stir until a soft, thick dough forms.
- Cover the bowl and refrigerate for about 30–60 minutes, or until the mixture is firm enough to handle.
- Scoop out small portions and roll them between your hands to form bite-sized balls.
- Place the cheesecake balls on a parchment-lined baking sheet and refrigerate for another 15–20 minutes.
- Melt the chocolate chips in the microwave in 20–30 second intervals, stirring between each interval until smooth. Stir in the optional oil for a thinner coating.
- Dip each cheesecake ball into the melted chocolate, coating it completely or drizzling the chocolate over the top.
- Return the coated balls to the refrigerator and chill for at least 30 minutes, or until the chocolate is completely set.
- Store in an airtight container in the refrigerator until ready to serve.
Tips
- Use full-fat cream cheese for the creamiest texture.
- Natural peanut butter can make the mixture softer, so regular creamy peanut butter works best.
- Add chopped peanuts, chocolate sprinkles, or a drizzle of melted peanut butter for decoration.
- Keep the cheesecake balls refrigerated because they contain cream cheese.
Makes about 20–24 cheesecake balls, depending on size.
