Creamy Italian Slow Cooker Chicken

Creamy Italian Slow Cooker Chicken

Tender chicken simmered low and slow in a rich, creamy Italian-style sauce. This easy dump-and-go dinner is perfect over mashed potatoes, rice, or egg noodles.

Ingredients

  • 2 lb boneless, skinless chicken thighs or chicken breasts
  • 1 cup creamy Italian dressing
  • 1 can (10.5 oz) cream of chicken soup
  • 1 packet (1 oz) dry Italian seasoning
  • 4 oz cream cheese, softened
  • ½ cup chicken broth
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese, optional
  • Fresh parsley, for garnish

Instructions

  1. Prepare the chicken: Place the chicken pieces in the bottom of a 6-quart slow cooker. Season lightly with garlic powder and black pepper.
  2. Make the creamy sauce: In a bowl, whisk together the creamy Italian dressing, cream of chicken soup, Italian seasoning, and chicken broth until smooth.
  3. Add to the slow cooker: Pour the creamy mixture evenly over the chicken.
  4. Cook: Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
  5. Add cream cheese: About 20–30 minutes before serving, add the softened cream cheese. Cover and continue cooking until melted. Stir the sauce until smooth and creamy.
  6. Finish: Stir in Parmesan cheese if desired. Garnish with fresh parsley.

Serving Suggestions

Serve this creamy chicken over mashed potatoes, steamed rice, egg noodles, or pasta. Spoon plenty of the creamy Italian sauce over the top for an extra comforting meal.

Tip: If using chicken breasts, avoid overcooking them; chicken thighs generally stay more tender in the slow cooker.
