Crispy Garlic Butter Yuca
Ingredients
- 2 lb (900 g) fresh cassava (yuca), peeled
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Peel the cassava and cut it into thick pieces. Remove the tough fibrous core from the center.
- Place the cassava in a large pot, cover with water, and add a pinch of salt.
- Bring to a boil and cook for 20–25 minutes, or until completely tender.
- Drain the cassava well and allow it to steam-dry for a few minutes.
- Preheat the oven to 425°F (220°C).
- Arrange the cooked cassava pieces on a baking sheet. Drizzle with olive oil and season with salt and black pepper.
- Roast for 20–25 minutes, turning halfway through, until golden and crispy.
- Meanwhile, melt the butter in a skillet over medium heat. Add the minced garlic and cook for about 30–60 seconds, until fragrant.
- Add the crispy yuca to the skillet and toss gently with the garlic butter.
- Sprinkle with fresh parsley and serve immediately.
Important: Cassava should always be thoroughly cooked and should never be eaten raw.
