Pineapple Coconut Dream Cake
Ingredients
For the Cake
- 1 package yellow cake mix
- Ingredients required on the cake mix package, usually eggs, oil, and water
- 1 can (20 oz) crushed pineapple with its juice
- 1 cup sweetened shredded coconut
For the Creamy Topping
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 cup cold milk
- 1 container (8 oz) whipped topping, thawed
Instructions
- Prepare the Cake:
Preheat the oven according to the temperature listed on the yellow cake mix package. Grease and lightly flour a 9×13-inch baking pan. - Prepare the cake batter according to the package directions. Pour the batter into the prepared pan and spread it evenly.
- Bake according to the package instructions, until the cake is golden and a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool slightly.
- Add the Pineapple:
While the cake is still warm, spread the crushed pineapple evenly over the top, including some of the pineapple juice. Allow the cake to cool completely. - Make the Creamy Topping:
In a medium bowl, whisk the instant vanilla pudding mix with the cold milk until smooth and slightly thickened. - Gently fold the thawed whipped topping into the pudding mixture until completely combined and creamy.
- Spread the pudding mixture evenly over the cooled pineapple layer.
- Sprinkle the sweetened shredded coconut evenly over the top.
- Refrigerate the cake for at least 2 hours, preferably overnight, to allow the layers to set and the flavors to blend.
- Slice, serve chilled, and enjoy!
