Ingredients

For the Chicken

  • 4 bone-in, skin-on chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika

For the Sweet Potato & Apple Bake

  • 2 large sweet potatoes, peeled and cubed
  • 2 apples, cored and sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup dried cranberries
  • 4 oz Brie cheese, cut into small pieces
  • ½ cup walnuts, roughly chopped
  • 2 tablespoons honey
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken: Pat the chicken dry and rub it with olive oil, salt, black pepper, garlic powder, thyme, and smoked paprika.
  3. Start the sweet potatoes: Place the cubed sweet potatoes in a large baking dish. Toss with olive oil, salt, cinnamon, and brown sugar.
  4. Add the chicken: Arrange the seasoned chicken over or beside the sweet potatoes. Roast for about 25 minutes.
  5. Caramelize the apples: Meanwhile, melt the butter in a skillet over medium heat. Add the sliced apples and cook for 4–6 minutes, stirring occasionally, until lightly golden and caramelized. Add the lemon juice and remove from the heat.
  6. Combine: After the chicken has roasted for 25 minutes, carefully add the caramelized apples and dried cranberries to the baking dish.
  7. Add Brie and walnuts: Scatter the Brie pieces and chopped walnuts over the sweet potatoes and apples. Drizzle everything with honey.
  8. Finish roasting: Return the dish to the oven and roast for another 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender.
  9. Rest and serve: Let the chicken rest for 5 minutes before serving. Spoon the caramelized apples, sweet potatoes, cranberries, melted Brie, and honey-glazed walnuts around the chicken.

Tip: For extra caramelization, broil the dish for 1–2 minutes at the end, watching carefully so the walnuts and honey don’t burn.
