Slow Cooker Pork Chops with Savory Stuffing

Ingredients
- 3–4 bone-in pork chops, about 1 inch thick
- 1 box (6 oz) seasoned stuffing mix
- 1 ½ cups chicken broth
- 1 small onion, diced
- 2 celery stalks, diced
- 4 tablespoons butter, melted
- 1 teaspoon dried sage
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- 1 tablespoon olive oil
Instructions
- Prepare the stuffing: In a bowl, combine the stuffing mix, diced onion, celery, melted butter, chicken broth, sage, thyme, rosemary, and garlic powder. Mix until the bread is evenly moistened.
- Season the pork chops: Pat the pork chops dry and season both sides generously with salt and black pepper.
- Assemble the slow cooker: Lightly grease the slow cooker and spread the stuffing mixture evenly across the bottom.
- Add the pork chops: Place the seasoned pork chops on top of the stuffing. Drizzle them lightly with olive oil.
- Cook: Cover and cook on LOW for 4–5 hours, or until the pork reaches an internal temperature of 145°F (63°C).
- Rest and serve: Let the pork chops rest for 5 minutes before serving. Spoon the flavorful stuffing onto each plate and top with a pork chop.
