Best Ever Easy Vegetable Beef Soup

A hearty, comforting soup packed with tender beef, wholesome vegetables, and a flavorful broth. It’s an easy one-pot meal made with simple ingredients and perfect for a cozy family dinner.

Ingredients

  • 1½ lbs (700 g) beef stew meat, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 1 cup green beans, cut into pieces
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp salt, or to taste
  • ½ tsp black pepper
  • 1 bay leaf
  • 1 cup frozen peas
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Brown the beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook for 5–7 minutes, turning occasionally, until browned on all sides.
  2. Add the aromatics: Add the chopped onion and cook for 2–3 minutes until softened. Stir in the garlic and cook for about 30 seconds.
  3. Build the soup: Add the carrots, celery, potatoes, green beans, diced tomatoes, tomato paste, beef broth, Italian seasoning, salt, pepper, and bay leaf. Stir well.
  4. Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 45–60 minutes, or until the beef becomes tender and the vegetables are cooked through.
  5. Add the peas: Stir in the frozen peas during the last 5 minutes of cooking.
  6. Finish: Remove the bay leaf. Taste and adjust the salt and pepper as needed.
  7. Serve: Ladle the hot soup into bowls and garnish with fresh parsley. Serve with crusty bread for a complete and comforting meal.

Tip: For especially tender beef, simmer the soup gently rather than boiling it rapidly.
