Simple Sausage Muffins

Ingredients
- 1 pound breakfast sausage
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1 cup milk
- ¼ cup melted butter
- 2 tablespoons chopped fresh parsley, optional
Instructions
- Preheat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners.
- Cook the sausage: Heat a skillet over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned and fully cooked. Drain any excess grease and let it cool slightly.
- Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
- Mix the wet ingredients: In another bowl, whisk together the eggs, milk, and melted butter.
- Combine: Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Add the filling: Fold in the cooked sausage, shredded cheddar cheese, and parsley if using.
- Fill the muffin pan: Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.
- Bake: Bake for 18–22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Cool and serve: Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack.
