Ingredients
For the Mashed Potatoes
- 6 cups Russet potatoes, peeled and cut into cubes
- 4 tablespoons butter
- 4 tablespoons 15% cream or light cream
- Salt and pepper, to taste
- Salted herbs, to taste
For the Seafood Filling
- 4 French shallots, finely chopped
- 6 tablespoons butter
- 6 tablespoons all-purpose flour
- 2 cups milk
- ½ cup white wine
- 15–25 scallops, drained and patted dry
- 15–25 shrimp, drained and patted dry
- Shredded mozzarella cheese, as needed
- Paprika, optional
Instructions
1. Prepare the Mashed Potatoes
Place the potatoes in a large saucepan and cover with cold salted water.
Bring to a boil and simmer for about 20 minutes, or until the potatoes are very tender.
Drain well and return the potatoes to the saucepan. Mash them with the butter, then add the cream and mix until smooth and creamy.
Season with salt, pepper, and salted herbs. Add a little more cream if needed.
2. Make the Creamy Seafood Filling
Preheat the oven to 350°F (180°C).
Melt the butter in a saucepan over medium heat. Add the finely chopped shallots and cook until softened.
Sprinkle in the flour and cook for about 1 minute, stirring constantly.
Gradually whisk in the milk and white wine. Bring the mixture to a gentle boil while whisking until the sauce thickens.
Cook for another minute, then remove from the heat.
Season with salt and pepper.
Add the scallops and shrimp to the creamy sauce and gently mix to combine.
3. Assemble the Gratins
Divide the seafood mixture among 4 individual gratin dishes or small oven-safe baking dishes.
Top each dish generously with the mashed potatoes.
Sprinkle with shredded mozzarella and add a light sprinkle of paprika if desired.
4. Bake
Bake for approximately 10 minutes, until heated through and the cheese has melted.
Switch the oven to broil and cook for another 1–2 minutes, watching carefully, until the cheese is beautifully golden and bubbly.
Serving
Serve these creamy scallop and shrimp gratins hot, straight from the oven. Pair them with a fresh green salad, steamed vegetables, or crusty French bread for a complete meal.
