This refreshing cucumber salad is creamy, tangy, slightly sweet, and incredibly easy to make! Thinly sliced cucumbers and sweet onions are coated in a delicious sour cream dressing with vinegar, sugar, and simple seasonings.

It’s the perfect chilled side dish for summer barbecues, family dinners, or any time you want something cool and refreshing!

 Ingredients

  • 4 medium cucumbers, peeled and thinly sliced
  • 1 small sweet onion, thinly sliced and separated into rings
  • ½ cup sour cream
  • 3 tablespoons white vinegar
  • 1 tablespoon granulated sugar
  • Salt, to taste
  • Black pepper, to taste

 Instructions

  1. Prepare the vegetables: Peel the cucumbers and slice them as thinly as possible. Thinly slice the sweet onion and separate the slices into rings.
  2. Make the dressing: In a large bowl, whisk together the sour cream, white vinegar, sugar, salt, and black pepper until smooth and well combined.
  3. Combine: Add the sliced cucumbers and onions to the bowl. Gently toss until everything is evenly coated with the creamy dressing.
  4. Chill: Cover the bowl and refrigerate for about 4 hours to allow the flavors to blend together.
  5. Serve: Give the salad a gentle stir before serving and enjoy chilled!

 Tips

  • For extra flavor, add a little fresh dill.
  • If the cucumbers release a lot of water, you can lightly salt them and let them sit for 15–20 minutes before making the salad, then drain and pat dry.
  • This salad tastes even better after chilling, but honestly… who can wait 4 hours?
