Fall Caramel Apple Pecan Cookies
Soft, chewy cinnamon-spiced cookies loaded with tender apples, toasted pecans, and a sweet caramel drizzle in every cozy bite!
Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 1/2 cups finely diced apples
- 1 cup pecans, chopped and lightly toasted
- 1/2 cup caramel sauce, for drizzling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract, then mix until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Gently fold in the diced apples and toasted pecans.
- Scoop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 11–14 minutes, until the edges are lightly golden and the centers are still soft.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack.
- Once cooled slightly, drizzle generously with sweet caramel sauce.
