Classic Creamy Homemade Potato Salad
Ingredients
- 2 lbs potatoes, peeled and cut into chunks
- 4 hard-boiled eggs, chopped
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- ½ cup celery, finely chopped
- ¼ cup onion, finely chopped
- 2 tablespoons sweet pickle relish
- 1 teaspoon sugar
- Salt and black pepper, to taste
- Paprika, for garnish
- Fresh parsley or green onions, optional
Instructions
- Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil and cook for 10–15 minutes, or until the potatoes are fork-tender. Be careful not to overcook them.
- Drain the potatoes and allow them to cool slightly.
- In a large bowl, mix together the mayonnaise, mustard, sweet pickle relish, sugar, salt, and black pepper.
- Add the cooked potatoes, chopped hard-boiled eggs, celery, and onion.
- Gently fold everything together until the potatoes are evenly coated with the creamy dressing.
- Cover and refrigerate for at least 1 hour before serving so the flavors can blend together.
- Sprinkle with paprika and garnish with parsley or green onions before serving.
