 Ingredients

For the Apple Fritters

  • 2 large apples, peeled, cored, and diced into small pieces
  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 large eggs
  • ½ cup whole milk

  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract
  • Pinch of salt

 Instructions

1. Prepare the Apples

Peel and core the apples, then cut them into small pieces. Smaller pieces distribute throughout the batter and make sure you get plenty of apple in every bite.

Set the diced apples aside while you prepare the batter.

2. Mix the Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.

Mix well so the spices are evenly distributed throughout the flour.

3. Prepare the Wet Ingredients

In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter until smooth.

Pour the wet ingredients into the dry ingredients and gently stir until just combined.

Do not overmix the batter. A few small lumps are perfectly fine.

4. Add the Apples

Fold the diced apples into the batter.

The mixture should be thick and loaded with apples. If it seems too thin, allow it to sit for a couple of minutes; the flour will continue to absorb some of the liquid.

5. Heat the Oil

Pour about 2 inches of vegetable oil into a deep, heavy-bottomed skillet or pot.

Heat the oil to approximately 350°F (175°C).

Maintaining the correct temperature is important. If the oil is too hot, the outside will brown before the center cooks. If it is too cool, the fritters may absorb too much oil.

6. Fry the Fritters

Carefully scoop generous portions of batter into the hot oil.

7. Drain

In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and a tiny pinch of salt.

Add the milk gradually until you reach a smooth glaze that is thick enough to coat the fritters but still easy to drizzle.

While the fritters are still slightly warm, drizzle the glaze generously over the tops.

You can also dip the entire top of each fritter directly into the glaze.

Place them on a wire rack and allow the glaze to set for several minutes.

  • Dice the apples small: This helps them cook evenly and gives you apple in every bite.

  • Don’t overcrowd the pan: Frying too many at once lowers the oil temperature.
