Chocolate Caramel Cheesecake Bars

Ingredients
For the Chocolate Cookie Crust
- 24 chocolate sandwich cookies, finely crushed
- 5 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar, optional
- Pinch of salt
For the Cheesecake Filling
- 16 oz cream cheese, softened to room temperature
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 2 tablespoons all-purpose flour
- Pinch of salt
For the Caramel Layer
- 1 cup granulated sugar
- 6 tablespoons unsalted butter, cut into pieces
- 1/2 cup heavy cream, warmed
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
For the Chocolate Topping
- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter

Instructions
1. Prepare the Pan
Preheat your oven to 350°F (175°C).
Line a 9×13-inch baking pan with parchment paper, leaving some overhang on the sides. This will make it easier to lift the cheesecake bars out after chilling.
2. Make the Chocolate Crust
Place the chocolate sandwich cookies in a food processor and pulse until finely crushed.
Mix the crumbs with the melted butter, sugar if using, and a pinch of salt until the mixture resembles wet sand.
Press the mixture firmly and evenly into the bottom of the prepared pan.
Bake for 8–10 minutes. Remove from the oven and let cool slightly.
3. Prepare the Cheesecake Layer
In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
Add the eggs one at a time, mixing just until incorporated after each addition.
Add the vanilla extract, sour cream, flour, and salt. Mix until smooth, but avoid overmixing.
Pour the cheesecake mixture over the chocolate crust and spread it evenly.
Bake for approximately 25–30 minutes, or until the center is set but still has a slight jiggle.
Remove from the oven and allow it to cool completely.
4. Make the Caramel
Place the sugar in a medium heavy-bottomed saucepan over medium heat.
Allow the sugar to melt, stirring gently as it begins to dissolve. Continue cooking until it turns a deep golden amber color.
Carefully add the butter a few pieces at a time. The mixture will bubble vigorously.
Slowly pour in the warm heavy cream while whisking constantly.
Continue cooking for another 1–2 minutes until smooth.
Remove from the heat and stir in the vanilla and salt.
Allow the caramel to cool for several minutes until slightly thickened.
Pour the caramel evenly over the cooled cheesecake layer.
Refrigerate for about 20–30 minutes to allow the caramel to firm up.
5. Make the Chocolate Topping
Place the chocolate chips in a heatproof bowl.
Warm the heavy cream until steaming but not boiling.
Pour the hot cream over the chocolate chips and let sit for 2 minutes.
Add the butter and gently whisk until the chocolate is completely melted and the mixture is smooth and glossy.
Pour the chocolate ganache over the caramel layer and spread evenly with a spatula.
6. Chill
Refrigerate the cheesecake bars for at least 4 hours, preferably overnight.
For the cleanest slices, chill them thoroughly before cutting.
7. Cut and Serve
Lift the chilled cheesecake out of the pan using the parchment paper.
Use a sharp knife to cut into squares or rectangles. For extra-clean cuts, wipe the knife between slices.
Drizzle with additional caramel sauce and sprinkle with flaky sea salt or chocolate shavings if desired.
