Canadian Cheese Soup

Ingredients
- 3 tablespoons butter
- 1/4 cup finely chopped onion
- 1/4 cup finely grated carrot
- 3 tablespoons all-purpose flour
- 1/2 teaspoon paprika
- 1/2 teaspoon dry mustard
- 2 cups chicken broth
- 2 cups whole milk
- 2 cups shredded sharp cheddar cheese
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- Fresh parsley, for garnish
Instructions
- Melt the butter in a large saucepan over medium heat.
- Add the chopped onion and grated carrot. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
- Stir in the flour, paprika, and dry mustard. Cook for about 1 minute, stirring constantly.
- Gradually whisk in the chicken broth until smooth and well combined.
- Slowly pour in the milk while continuing to whisk.
- Cook over medium heat, stirring frequently, until the soup thickens and is hot. Do not let it boil vigorously.
- Reduce the heat to low and gradually add the shredded cheddar cheese, stirring until completely melted and smooth.
- Season with salt and black pepper to taste.
- Serve immediately, garnished with fresh parsley and an extra sprinkle of paprika if desired.
Tip: Once the cheese is added, keep the soup on low heat and avoid boiling. This helps keep the cheese smooth instead of causing it to separate.
