CLOUD CAKE — LIGHT, FLUFFY & DELICIOUS
This Cloud Cake is incredibly soft, fluffy, creamy, and light as a cloud! It has a delicate texture and a rich cream cheese flavor that makes every bite irresistible. The best part? It’s simple to prepare and perfect for enjoying with your morning coffee or afternoon tea.
Ingredients
- 200g (7 oz) cream cheese, softened
- 50g (3 tbsp) unsalted butter, softened
- 100ml (7 tbsp) milk
- 4 large eggs, separated
- 70g (⅓ cup) granulated sugar
- 40g (⅓ cup) cake flour
- 10g (1 tbsp) cornstarch
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 320°F (160°C). Line the bottom of a round cake pan with parchment paper.
- Place the softened cream cheese, butter, and milk in a heatproof bowl. Gently warm the mixture over a double boiler, stirring until everything is completely smooth and well combined. Remove from the heat and let it cool slightly.
- Add the egg yolks and vanilla extract to the cream cheese mixture. Whisk until smooth.
- Sift in the cake flour and cornstarch. Mix gently until you have a smooth, lump-free batter.
- In a separate clean bowl, beat the egg whites until foamy. Gradually add the sugar and continue beating until you get soft, glossy peaks. Do not overbeat.
- Gently fold the whipped egg whites into the cream cheese batter in three additions. Use a spatula and fold slowly to keep as much air in the mixture as possible. This will give your cake its beautiful cloud-like texture.
- Pour the batter into the prepared cake pan and gently tap the pan once or twice on the counter to remove large air bubbles.
- Place the cake pan in a larger baking tray and pour in some hot water to create a water bath. This helps the cake bake gently and prevents it from cracking.
- Bake for approximately 50–60 minutes, or until the cake is lightly golden on top and feels set but still soft and delicate.
- Turn off the oven and leave the cake inside with the oven door slightly open for about 10–15 minutes. This helps prevent the cake from shrinking too quickly.
- Remove the cake from the oven and let it cool completely before carefully removing it from the pan.
- Dust with powdered sugar before serving, if desired.
