Cheesy Ground Beef and Rice Casserole

Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large oven-safe skillet over medium heat. Add the ground beef and diced onion. Cook for 5–7 minutes, breaking up the beef with a spoon, until browned and the onion is softened.
  3. Add the minced garlic and cook for another 30 seconds.
  4. Stir in the uncooked rice, beef broth, diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and black pepper.
  5. Bring the mixture to a gentle simmer. Cover the skillet tightly with a lid or aluminum foil and cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. Remove the lid and stir everything together. Sprinkle the cheddar and mozzarella evenly over the top.
  7. Transfer the skillet to the oven and bake uncovered for 10–15 minutes, until the cheese is completely melted, bubbly, and lightly golden.
  8. Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley and enjoy!

Tip: You can add bell peppers, corn, mushrooms, or black beans for extra flavor and texture.
