Ingredients
For the Meatloaf
- 2 lbs (900 g) lean ground beef
- 1 cup plain breadcrumbs
- 1 small onion, finely diced
- 2 large eggs
- 1/2 cup milk
- 2 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
For the Brown Sugar Glaze
- 1/2 cup packed brown sugar
- 1/2 cup ketchup
- 1 tbsp yellow mustard
- 1 tsp apple cider vinegar
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, onion, eggs, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
- Shape the mixture into a loaf that will fit inside your slow cooker.
- Place the meatloaf in the slow cooker. If desired, place it on a sheet of aluminum foil with the sides folded up slightly to make lifting it out easier.
- In a small bowl, whisk together the brown sugar, ketchup, mustard, and apple cider vinegar.
- Spread half of the glaze over the meatloaf.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the internal temperature reaches 160°F (71°C).
- During the last 20–30 minutes of cooking, spread the remaining glaze over the meatloaf.
- Carefully remove the meatloaf from the slow cooker and let it rest for 10 minutes before slicing.
