  • 1 pound ground beef
  • 5 medium potatoes, peeled and thinly sliced

  • 1 tablespoon olive oil
  • 1 teaspoon salt

  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • 1 cup heavy cream
  • 1 cup sour cream or softened cream cheese
  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, then stir in the garlic.
  3. Add the ground beef and cook until browned, breaking it apart with a spoon. Season with the salt, pepper, paprika, and thyme. Drain any excess grease.
  4. Arrange half of the sliced potatoes in an even layer in the prepared baking dish.
  5. Spread the cooked ground beef evenly over the potatoes.
  6. Top with the remaining potato slices.
  7. In a bowl, whisk together the heavy cream and sour cream until smooth. Pour the mixture evenly over the casserole.
  8. Cover the dish with aluminum foil and bake for 50 minutes, or until the potatoes are tender.
  9. Remove the foil and sprinkle the cheddar and mozzarella cheeses evenly over the top.
  10. Return the casserole to the oven and bake for another 15–20 minutes, or until the cheese is melted, bubbly, and lightly golden.
  11. Let the casserole rest for 10 minutes before serving.
