Mexican Shrimp Cocktail with Avocado
Ingredients:
- 1 lb (450 g) cooked medium shrimp, peeled and deveined
- 2 ripe avocados, diced
- 2 cups tomato juice or Clamato juice
- ½ cup ketchup
- ¼ cup fresh lime juice
- 1 small cucumber, peeled and diced
- 2 Roma tomatoes, diced
- ¼ cup red onion, finely chopped
- 1 jalapeño, finely minced (optional)
- ¼ cup fresh cilantro, chopped
- 1 tsp hot sauce (optional)
- Salt and black pepper, to taste
Instructions:
- In a large bowl, whisk together the tomato juice, ketchup, lime juice, and hot sauce until well combined.
- Add the cucumber, tomatoes, red onion, jalapeño, and cilantro. Stir well.
- Fold in the cooked shrimp and season with salt and black pepper.
- Cover and refrigerate for at least 30 minutes so the flavors blend.
- Just before serving, gently fold in the diced avocado.
- Serve chilled in individual glasses or bowls with tortilla chips, saltine crackers, or tostadas. Garnish with extra cilantro and lime wedges if desired.
