Mexican Shrimp Cocktail with Avocado 

Ingredients:

  • 1 lb (450 g) cooked medium shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 2 cups tomato juice or Clamato juice
  • ½ cup ketchup
  • ¼ cup fresh lime juice
  • 1 small cucumber, peeled and diced
  • 2 Roma tomatoes, diced
  • ¼ cup red onion, finely chopped
  • 1 jalapeño, finely minced (optional)
  • ¼ cup fresh cilantro, chopped
  • 1 tsp hot sauce (optional)
  • Salt and black pepper, to taste

Instructions:

  1. In a large bowl, whisk together the tomato juice, ketchup, lime juice, and hot sauce until well combined.
  2. Add the cucumber, tomatoes, red onion, jalapeño, and cilantro. Stir well.
  3. Fold in the cooked shrimp and season with salt and black pepper.
  4. Cover and refrigerate for at least 30 minutes so the flavors blend.
  5. Just before serving, gently fold in the diced avocado.
  6. Serve chilled in individual glasses or bowls with tortilla chips, saltine crackers, or tostadas. Garnish with extra cilantro and lime wedges if desired.
