Ingredients
For the Ribeye
- 2 ribeye steaks (10–12 ounces each)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 garlic cloves, smashed
- 2 sprigs fresh rosemary or thyme
- Salt, to taste
- Freshly ground black pepper, to taste
For the Creamy Garlic Shrimp Fettuccine
- 12 ounces fettuccine
- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley
- Optional: red pepper flakes for a little heat
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions until al dente. Reserve 1/2 cup of the pasta water, then drain.
- Pat the ribeye steaks dry and season generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Sear the steaks for about 3–4 minutes per side for medium-rare, depending on thickness.
- Add the butter, smashed garlic, and rosemary or thyme to the skillet. Tilt the pan and spoon the melted butter over the steaks for 1–2 minutes. Transfer the steaks to a cutting board and let them rest for at least 10 minutes.
- Season the shrimp with paprika, Italian seasoning, salt, and pepper.
- In the same skillet, melt the butter over medium heat. Add the shrimp and cook for 1–2 minutes per side until pink. Remove and set aside.
- Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream, stirring well. Simmer for 2–3 minutes.
- Stir in the Parmesan cheese until melted and smooth. If needed, add a splash of the reserved pasta water to reach your desired consistency.
- Add the cooked fettuccine and toss until fully coated in the creamy garlic sauce.
- Return the shrimp to the skillet and gently mix everything together.
- Slice the rested ribeye against the grain.
- Divide the creamy shrimp fettuccine among serving plates and top with sliced ribeye. Garnish with fresh parsley and, if desired, a pinch of red pepper flakes.
Tips
- Use freshly grated Parmesan for the smoothest, creamiest sauce.
- Let the steak rest before slicing to keep it juicy.
- Avoid overcooking the shrimp—they only need a few minutes.
- Serve with garlic bread and a fresh green salad for a complete meal.
