Ingredients

  • 24 wonton wrappers
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound small shrimp, peeled, deveined, and chopped
  • 3 garlic cloves, minced
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly spray a 24-cup mini muffin pan with cooking spray.
  3. Press one wonton wrapper into each muffin cup, forming small cups.
  4. Bake the wonton wrappers for 5 minutes until they begin to turn lightly golden.
  5. Meanwhile, heat the olive oil and butter in a skillet over medium heat.
  6. Add the garlic and cook for about 30 seconds until fragrant.
  7. Add the chopped shrimp, paprika, Italian seasoning, salt, and pepper. Cook for 2–3 minutes until the shrimp are just pink. Remove from the heat and let cool slightly.
  8. In a medium bowl, combine the cream cheese, sour cream, mozzarella, cheddar, Parmesan, and parsley.
  9. Fold the cooked shrimp into the cheese mixture until well combined.
  10. Spoon the filling evenly into the baked wonton cups.
  11. Return the pan to the oven and bake for 10–12 minutes, or until the filling is hot and bubbly and the edges of the wonton wrappers are golden brown.
  12. Let cool for 3–5 minutes before removing the bites from the pan.
  13. Garnish with additional chopped parsley and serve warm.
