Hawaiian Cheesecake Salad
Ingredients
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 (20-ounce) can crushed pineapple, well drained
- 1 (20-ounce) can pineapple chunks, well drained
- 1 cup mini marshmallows
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans

- Maraschino cherries
- Toasted coconut flakes
- Extra chopped pecans
- Fresh pineapple chunks
Instructions
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar and vanilla extract, then continue beating until fully combined.
- In a separate chilled bowl, whip the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
- Fold in the drained crushed pineapple, pineapple chunks, mini marshmallows, shredded coconut, and chopped pecans. Mix gently until everything is evenly coated.
- Cover the bowl and refrigerate for at least 2 hours, or overnight for the best flavor.
- Stir gently before serving and garnish with toasted coconut, pecans, or maraschino cherries if desired.
