Creamy Mushroom & Spinach Stuffed Sweet Potatoes

A cozy, wholesome dish where naturally sweet roasted sweet potatoes are stuffed with savory mushrooms, garlicky spinach, and a rich, creamy filling. Perfect for an easy weeknight dinner or a comforting vegetarian meal that’s packed with flavor.

Ingredients

For the Sweet Potatoes

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

For the Filling

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 8 ounces cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • ½ teaspoon dried thyme
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • ½ cup heavy cream
  • ¼ cup cream cheese, softened
  • ⅓ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese

Optional Garnish

  • Chopped fresh parsley
  • Extra Parmesan cheese
  • Crushed red pepper flakes

Instructions

Step 1: Roast the Sweet Potatoes

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes clean and prick each several times with a fork.
  3. Rub with olive oil and sprinkle lightly with salt.
  4. Place on a baking sheet and roast for 45–60 minutes, or until fork-tender.

Step 2: Prepare the Filling

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Add the mushrooms and cook for 6–8 minutes until browned and their moisture has evaporated.
  3. Stir in the garlic, thyme, and onion powder. Cook for 1 minute.
  4. Add the spinach and cook until wilted.
  5. Pour in the heavy cream and stir in the cream cheese until smooth.
  6. Mix in the Parmesan and mozzarella cheeses. Cook for 2–3 minutes until the sauce is creamy. Season with salt and pepper.

Step 3: Stuff the Potatoes

  1. Slice each roasted sweet potato lengthwise without cutting all the way through.
  2. Gently fluff the inside with a fork.
  3. Spoon the creamy mushroom and spinach mixture into each potato.

Step 4: Finish and Serve

  1. Sprinkle with extra Parmesan if desired.
  2. Return to the oven for 5–10 minutes until heated through and the cheese is melted.
  3. Garnish with fresh parsley and red pepper flakes before serving.
