Creamy Mushroom & Spinach Stuffed Sweet Potatoes

Ingredients
For the Sweet Potatoes
- 4 medium sweet potatoes
- 1 tablespoon olive oil
- Salt and black pepper, to taste
For the Filling
- 2 tablespoons butter
- 1 tablespoon olive oil
- 8 ounces cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups fresh spinach
- ½ teaspoon dried thyme
- ½ teaspoon onion powder
- Salt and black pepper, to taste
- ½ cup heavy cream
- ¼ cup cream cheese, softened
- ⅓ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese

Instructions
Step 1: Roast the Sweet Potatoes
- Preheat the oven to 400°F (200°C).
- Scrub the sweet potatoes clean and prick each several times with a fork.
- Rub with olive oil and sprinkle lightly with salt.
- Place on a baking sheet and roast for 45–60 minutes, or until fork-tender.
Step 2: Prepare the Filling
- Heat butter and olive oil in a large skillet over medium heat.
- Add the mushrooms and cook for 6–8 minutes until browned and their moisture has evaporated.
- Stir in the garlic, thyme, and onion powder. Cook for 1 minute.
- Add the spinach and cook until wilted.
- Pour in the heavy cream and stir in the cream cheese until smooth.
- Mix in the Parmesan and mozzarella cheeses. Cook for 2–3 minutes until the sauce is creamy. Season with salt and pepper.
Step 3: Stuff the Potatoes
- Slice each roasted sweet potato lengthwise without cutting all the way through.
- Gently fluff the inside with a fork.
- Spoon the creamy mushroom and spinach mixture into each potato.
Step 4: Finish and Serve
- Sprinkle with extra Parmesan if desired.
- Return to the oven for 5–10 minutes until heated through and the cheese is melted.
- Garnish with fresh parsley and red pepper flakes before serving.
