Classic Creamy Rice Pudding
Ingredients:
- ¾ cup uncooked white rice
- 2 cups water
- 4 cups whole milk
- ⅓ cup granulated sugar
- ¼ tsp salt
- 2 large eggs, lightly beaten
- 1 tsp vanilla extract
- ½ tsp ground cinnamon (plus extra for garnish)
- ¼ cup raisins (optional)
- 1 tbsp butter
Instructions:
- In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat, cover, and simmer for 15–18 minutes, or until the water is absorbed.
- Stir in the milk, sugar, and salt. Cook over medium-low heat, stirring frequently, for 25–30 minutes until the mixture becomes thick and creamy.
- In a small bowl, whisk the eggs. Slowly add about ½ cup of the hot rice mixture to the eggs while whisking continuously to temper them.
- Gradually pour the egg mixture back into the saucepan, stirring constantly. Cook for 2–3 minutes, until slightly thickened. Do not let it boil.
- Remove from the heat and stir in the vanilla extract, cinnamon, butter, and raisins (if using).
- Serve warm, or chill for a few hours for a cold dessert. Sprinkle with extra cinnamon before serving if desired.
