These hearty, protein-packed breakfast jars are the perfect make-ahead meal. Just open a jar, heat it, and enjoy a hot, satisfying breakfast in minutes. They’re ideal for busy mornings, camping trips, or keeping homemade meals ready whenever you need them.

Ingredients (Per Pint Jar)

  • 4 eggs, beaten
  • ½ cup diced potatoes
  • 3 strips bacon, cooked and crumbled
  • 3 smoked sausage links, chopped
  • ¼ cup shredded cheese
  • Salt and black pepper, to taste (optional)

Instructions

  1. Prepare the Potatoes
    Wash, peel (if desired), and dice the potatoes into small cubes. Parboil them for 2–3 minutes, then drain well.
  2. Cook the Meat
    Cook the bacon until crispy, then crumble it. Slice the smoked sausage into bite-sized pieces and lightly brown if desired.
  3. Beat the Eggs
    Crack the eggs into a bowl and whisk until smooth. Season lightly with salt and black pepper if desired.
  4. Fill the Jars
    Into each clean pint jar, add the diced potatoes, crumbled bacon, chopped sausage, and shredded cheese. Pour the beaten eggs over the top, leaving about 1 inch of headspace. Use a clean utensil to remove any air bubbles.
  5. Prepare for Canning
    Wipe the jar rims clean, place the lids on, and screw the bands on until fingertip tight.
  6. Pressure Can
    Place the jars in a pressure canner following the manufacturer’s instructions. Process pint jars at 10 pounds of pressure for 75 minutes (adjust pressure for your altitude if needed).
  7. Cool and Store
    Allow the canner to depressurize naturally. Remove the jars and let them cool undisturbed for 12–24 hours. Check that each jar has sealed properly before storing in a cool, dark place.

To Serve

Open a jar, pour the contents into a microwave-safe dish or skillet, and heat until hot throughout. Enjoy as is, or serve with toast, fresh fruit, or salsa for a complete breakfast.
