Slow Cooker Honey Soy Chicken
Ingredients:
- 1½ kg chicken thighs (bone-in or boneless, skinless)
- ½ cup soy sauce
- ⅓ cup honey
- ¼ cup ketchup
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp sesame oil (optional)
- 1 tsp black pepper
- 1 tbsp cornstarch
- 2 tbsp water
- Sesame seeds, for garnish
- Sliced green onions, for garnish
Instructions:
- Place the chicken thighs in the slow cooker.
- In a bowl, whisk together the soy sauce, honey, ketchup, garlic, ginger, vinegar, sesame oil, and black pepper.
- Pour the sauce over the chicken, making sure it is well coated.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender.
- Remove the chicken and keep warm.
- Mix the cornstarch with the water to make a slurry. Stir it into the sauce in the slow cooker.
- Cook on HIGH for 10–15 minutes, or until the sauce thickens.
- Return the chicken to the slow cooker and coat it with the thickened sauce.
- Garnish with sesame seeds and sliced green onions.

Serve over steamed rice, noodles, or alongside stir-fried vegetables. Enjoy!
