Slow Cooker Honey Soy Chicken

Ingredients:

  • 1½ kg chicken thighs (bone-in or boneless, skinless)
  • ½ cup soy sauce
  • ⅓ cup honey
  • ¼ cup ketchup
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp sesame oil (optional)
  • 1 tsp black pepper
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

Instructions:

  1. Place the chicken thighs in the slow cooker.
  2. In a bowl, whisk together the soy sauce, honey, ketchup, garlic, ginger, vinegar, sesame oil, and black pepper.
  3. Pour the sauce over the chicken, making sure it is well coated.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender.
  5. Remove the chicken and keep warm.
  6. Mix the cornstarch with the water to make a slurry. Stir it into the sauce in the slow cooker.
  7. Cook on HIGH for 10–15 minutes, or until the sauce thickens.
  8. Return the chicken to the slow cooker and coat it with the thickened sauce.
  9. Garnish with sesame seeds and sliced green onions.

Serving Suggestions:

Serve over steamed rice, noodles, or alongside stir-fried vegetables. Enjoy!
