BEST Homemade Salsa Ever
Ingredients
- 1 (28 oz) can whole tomatoes (with juice)
- 2 (10 oz) cans Rotel (diced tomatoes with green chilies)
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 whole jalapeño, seeded and chopped (leave seeds in for extra heat, if desired)
- 1/4 teaspoon sugar
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon ground cumin
- 1/2 cup fresh cilantro, chopped
- Juice of 1/2 lime
Instructions
- Add the whole tomatoes with their juice, Rotel, chopped onion, garlic, jalapeño, sugar, salt, cumin, cilantro, and lime juice to a food processor or blender.
- Pulse several times until you reach your preferred consistency. For a chunkier salsa, pulse just a few times. For a smoother salsa, blend a little longer.
- Taste and adjust the seasoning with more salt or lime juice if needed.
- Transfer to a bowl, cover, and refrigerate for at least 1 hour to let the flavors develop.
- Serve chilled with tortilla chips, tacos, burritos, grilled meats, or your favorite Mexican dishes.
