Ingredients

  • 1 bunch fresh asparagus spears, trimmed
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning (optional)
  • Cooking spray or a little olive oil

Instructions

1) Prepare the asparagus

Wash the asparagus and trim off the tough ends. Pat dry with paper towels.

2) Preheat the oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

3) Set up the coating station

Prepare 3 shallow bowls:

  • Bowl 1: Add the flour
  • Bowl 2: Add the beaten eggs
  • Bowl 3: Mix together the panko breadcrumbs, Parmesan cheese, garlic powder, salt, black pepper, and Italian seasoning if using

4) Coat the asparagus

Dip each asparagus spear into the flour, shaking off the excess.
Then dip it into the beaten eggs.
Finally, roll it in the Parmesan breadcrumb mixture, pressing gently so the coating sticks well.

5) Arrange on the baking sheet

Place the coated asparagus spears in a single layer on the prepared baking sheet. Lightly spray with cooking spray or drizzle with a little olive oil to help them crisp up.

6) Bake

Bake for 12–15 minutes, or until the asparagus is tender and the coating is golden and crispy.

7) Serve

Serve hot with your favorite dipping sauce such as:

  • Ranch dressing
  • Garlic aioli
  • Marinara sauce
  • Spicy mayo

Tips

  • For extra crispiness, place the asparagus on a wire rack over the baking sheet.
  • Thin asparagus will cook faster, so start checking at 10 minutes.
  • You can also make these in the air fryer at 400°F (200°C) for about 7–9 minutes.
