Cherry Cheesecake Bars

Ingredients

For the crust

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted

For the cheesecake filling

  • 16 oz (450 g) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

For the cherry topping

  • 1 can (about 21 oz / 595 g) cherry pie filling

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. Make the crust:
    In a bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 8–10 minutes, then remove it from the oven and let it cool slightly.
  4. Prepare the cheesecake filling:
    In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully combined.
  5. Assemble the bars:
    Pour the cheesecake mixture over the baked crust and spread it evenly.
  6. Bake for 30–35 minutes, or until the center is set and only slightly jiggly.
  7. Cool completely at room temperature, then refrigerate for at least 3–4 hours (or overnight) until fully chilled.
  8. Add the topping:
    Spread the cherry pie filling evenly over the chilled cheesecake layer.
  9. Slice and serve:
    Lift the bars out of the pan, cut into squares, and serve cold.

Optional Tips

  • For cleaner slices, wipe the knife between cuts.
  • You can use homemade cherry topping instead of canned pie filling if you prefer.
  • Store leftovers in the refrigerator for up to 4 days.
