4-Ingredient Potato, Egg & Cheese Comfort Meal
Ingredients
- 2 large potatoes, peeled and cut into chunks
- 4 large eggs
- 1 tablespoon butter
- 1 cup shredded cheese (cheddar, mozzarella, or any melting cheese)
- Salt, to taste
- Black pepper, to taste
Instructions
- Place the peeled and chopped potatoes in a pot and cover them with water. Add a pinch of salt and bring to a boil. Cook for 15–20 minutes, or until the potatoes are very tender.
- Drain the potatoes well, then return them to the pot or place them in a large bowl. Mash them until mostly smooth, leaving a little texture if you like.
- Add the butter to the hot potatoes and stir until melted and fully combined. Season lightly with salt and black pepper.
- In a separate bowl, beat the 4 eggs until smooth.
- Add the beaten eggs to the warm mashed potatoes and mix quickly until well combined.
- Transfer the mixture to a nonstick skillet or pan over low heat. Stir gently and continuously for 3–5 minutes, until the eggs begin to cook and the mixture becomes soft and creamy.
- Add the shredded cheese and continue stirring until fully melted and combined.
- Taste and adjust seasoning if needed, then serve immediately while hot and cheesy.
Optional Add-Ins
If you want to make it even more flavorful, you can add:
- 1 tablespoon chopped parsley
- a pinch of garlic powder
- a little paprika
- chopped green onions

This dish is delicious served on its own, or with:

Notes
- Use starchy potatoes like Russet for a softer texture, or Yukon Gold for a creamier result.
- Keep the heat low after adding the eggs so they stay soft and don’t scramble too quickly.
