  • 1 pound (450 g) asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces (225 g) cremini mushrooms, sliced
  • 4–6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce (or tamari for a gluten-free option)
  • 1 teaspoon black pepper
  • Salt, to taste
  • 1 tablespoon butter (optional, for extra richness)

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  3. Add the shrimp and cook for 1–2 minutes per side until pink and opaque. Remove from the pan and set aside.
  4. Add the remaining tablespoon of olive oil to the skillet.
