Ingredients
- 4 cups diced potatoes (about 5–6 medium potatoes)
- 2 cups cooked ham, diced
- 1 small onion, finely chopped
- 1 can (10.5 oz / 300 g) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ¼ teaspoon salt (optional, depending on the saltiness of the ham)
- 2 tablespoons butter, cut into small pieces
- Fresh parsley for garnish (optional)
Instructions
- Lightly grease the inside of your slow cooker with cooking spray or butter.
- In a large bowl, combine the cream of chicken soup, sour cream, garlic powder, black pepper, paprika, and salt. Mix until smooth.
- Add the diced potatoes, ham, onion, and half of the shredded cheese to the bowl. Stir until everything is evenly coated.
- Transfer the mixture to the slow cooker and spread it evenly.
- Dot the top with the butter pieces.
- Cover and cook:
- On LOW for 6–7 hours, or
- On HIGH for 3–4 hours,
until the potatoes are tender.
- During the last 20 minutes of cooking, sprinkle the remaining cheddar cheese over the top.
- Cover again and cook until the cheese is melted.
- Garnish with fresh parsley if desired and serve hot.
