Slow Cooker Meatloaf Patties & Potatoes
Juicy beef patties glazed with a rich tomato sauce, slow-cooked over tender potatoes—this cozy one-pot meal is hearty, comforting, and packed with homestyle flavor!
Ingredients
For the Meatloaf Patties:
- 500g ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- ½ cup breadcrumbs
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Worcestershire sauce
- 1 tsp dried parsley
For the Potatoes:
- 4–5 medium potatoes, peeled and sliced into thick rounds
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
For the Tomato Glaze:
- ½ cup ketchup
- 2 tbsp tomato paste
- 1 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- ½ tsp garlic powder
- ¼ cup beef broth or water
Instructions
- In a large bowl, combine the ground beef, onion, garlic, egg, breadcrumbs, salt, pepper, Worcestershire sauce, and parsley. Mix gently until just combined.
- Shape the mixture into 4–6 oval patties.
- Lightly grease the slow cooker. Arrange the sliced potatoes on the bottom and season with olive oil, salt, and pepper.
- Place the meatloaf patties on top of the potatoes.
- In a small bowl, whisk together the ketchup, tomato paste, brown sugar, Worcestershire sauce, garlic powder, and beef broth.
- Spoon the sauce evenly over the patties.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the patties are cooked through and the potatoes are tender.
- Carefully serve the patties over the potatoes with plenty of the delicious sauce.
Tips
- Add sliced carrots around the potatoes for a complete one-pot meal.
- Sprinkle shredded cheddar cheese over the patties during the last 15 minutes of cooking for extra comfort-food goodness.
- Garnish with fresh parsley before serving.
