Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste
  • 8 oz (225 g) mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese
  • ½ cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Fresh parsley, chopped, for garnish

Instructions

Step 1: Season the Chicken

Season both sides of the chicken breasts with salt, black pepper, garlic powder, and paprika.

Step 2: Sear the Chicken

Heat olive oil and butter in a large oven-safe skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side until golden brown. Remove from the skillet and set aside.

Step 3: Cook the Vegetables

In the same skillet, add the mushrooms, onion, and bell pepper. Sauté for 5–6 minutes until softened and lightly caramelized.

Step 4: Make the Sauce

Pour in the chicken broth and Worcestershire sauce. Stir well and let simmer for about 2 minutes.

Step 5: Assemble

Return the chicken breasts to the skillet. Spoon the mushroom and onion mixture over each piece of chicken.

Step 6: Add the Cheese

Top each chicken breast with Monterey Jack cheese and cheddar cheese.

Step 7: Bake

Place the skillet in a preheated oven at 375°F (190°C) and bake for 15–18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.

Step 8: Serve

Garnish with fresh parsley and serve hot with mashed potatoes, rice, or steamed vegetables.

Pro Tip

For the juiciest chicken and best flavor, use a cast-iron skillet that can go directly from the stovetop to the oven. The retained heat helps keep the chicken tender while creating beautifully melted cheese on top.
