Ingredients

  • 12 oz (340g) pasta (penne, rotini, or fusilli)
  • 2 chicken breasts, diced
  • 8 slices bacon, cooked and crumbled
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1 packet (1 oz) ranch seasoning mix
  • 1 ½ cups cheddar cheese, shredded
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the diced chicken with salt and pepper, then cook for 6–8 minutes until golden brown and fully cooked. Transfer to a plate.
  3. In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes, stirring constantly to create a roux.
  4. Slowly pour in the milk and chicken broth while whisking continuously. Cook for 3–5 minutes until the sauce begins to thicken.
  5. Stir in the ranch seasoning mix, onion powder, Italian seasoning, salt, and pepper.
  6. Add the shredded cheddar cheese and stir until completely melted and smooth.
  7. Return the cooked chicken to the skillet. Add the cooked pasta and crumbled bacon. Toss everything together until evenly coated in the creamy ranch sauce.
  8. Simmer for 2–3 minutes to allow the flavors to blend.
  9. Garnish with fresh parsley and extra shredded cheese if desired. Serve hot and enjoy!

  • Add steamed broccoli for extra flavor and color.
  • Use Monterey Jack or Colby Jack cheese for a different cheesy twist.
  • For a spicy kick, add a pinch of red pepper flakes or diced jalapeños.
