Chicken Bacon Ranch Pasta

Ingredients
- 12 oz (340g) pasta (penne, rotini, or fusilli)
- 2 chicken breasts, diced
- 8 slices bacon, cooked and crumbled
- 2 tablespoons olive oil
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1 cup chicken broth
- 1 packet (1 oz) ranch seasoning mix
- 1 ½ cups cheddar cheese, shredded
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the diced chicken with salt and pepper, then cook for 6–8 minutes until golden brown and fully cooked. Transfer to a plate.
- In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes, stirring constantly to create a roux.
- Slowly pour in the milk and chicken broth while whisking continuously. Cook for 3–5 minutes until the sauce begins to thicken.
- Stir in the ranch seasoning mix, onion powder, Italian seasoning, salt, and pepper.
- Add the shredded cheddar cheese and stir until completely melted and smooth.
- Return the cooked chicken to the skillet. Add the cooked pasta and crumbled bacon. Toss everything together until evenly coated in the creamy ranch sauce.
- Simmer for 2–3 minutes to allow the flavors to blend.
- Garnish with fresh parsley and extra shredded cheese if desired. Serve hot and enjoy!
