Chocolate Coconut Bars

Ingredients
For the Coconut Layer
- 3 cups shredded coconut
- 1 can sweetened condensed milk
- 1 teaspoon vanilla extract

- 2 cups milk or dark chocolate chips
- 1 tablespoon coconut oil or butter
Instructions
- Line an 8×8-inch baking dish or tray with parchment paper.
- In a large bowl, mix the shredded coconut, sweetened condensed milk, and vanilla extract until thick and fully combined.
- Press the mixture firmly into the prepared pan, smoothing the top evenly with a spatula.
- Place the pan in the freezer for about 20–30 minutes until firm.
- Meanwhile, melt the chocolate chips with the coconut oil in the microwave in 30-second intervals, stirring each time until smooth and glossy.
- Remove the coconut layer from the freezer and pour the melted chocolate over the top.
- Spread evenly and refrigerate for at least 1 hour, or until fully set.
