These rich and chewy Chocolate Coconut Bars are the perfect sweet treat for coconut lovers. With a soft coconut center and a smooth chocolate topping, they taste just like homemade candy bars — simple, delicious, and impossible to resist.

Ingredients

For the Coconut Layer

  • 3 cups shredded coconut
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla extract

For the Chocolate Coating

  • 2 cups milk or dark chocolate chips
  • 1 tablespoon coconut oil or butter

Instructions

  1. Line an 8×8-inch baking dish or tray with parchment paper.
  2. In a large bowl, mix the shredded coconut, sweetened condensed milk, and vanilla extract until thick and fully combined.
  3. Press the mixture firmly into the prepared pan, smoothing the top evenly with a spatula.
  4. Place the pan in the freezer for about 20–30 minutes until firm.
  5. Meanwhile, melt the chocolate chips with the coconut oil in the microwave in 30-second intervals, stirring each time until smooth and glossy.
  6. Remove the coconut layer from the freezer and pour the melted chocolate over the top.
  7. Spread evenly and refrigerate for at least 1 hour, or until fully set.
  8. Slice into bars or squares and serve chilled.
