- 1 lb minced beef
- 2 tablespoons butter
- 2 medium onions, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef stock
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 sheet puff pastry
- 1 egg, beaten
- 1 tablespoon olive oil
- 1/2 cup frozen peas
- 1 tablespoon tomato paste
Directions
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the sliced onions and cook slowly for 12–15 minutes until soft, caramelized, and golden brown.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the minced beef and cook until browned, breaking it apart with a spoon as it cooks.
- Mix in the tomato paste, Worcestershire sauce, thyme, salt, and black pepper.
- Sprinkle the flour over the beef mixture and stir well to coat evenly.
- Gradually pour in the beef stock while stirring continuously to create a rich, thick gravy.
- Add the frozen peas and simmer for 5 minutes until the filling thickens.
- Preheat the oven to 400°F (200°C).
- Transfer the beef filling into a pie dish and allow it to cool slightly.
- Lay the puff pastry over the top, trim the excess, and crimp the edges to seal.
- Brush the pastry with beaten egg and cut a few small slits on top to let steam escape.
- Bake for 30–35 minutes until the pastry is puffed and deeply golden brown.
- Let the pie rest for 5 minutes before slicing and serving.
