Keto Chocolate Silk Pie (Low-Carb, No Sugar)
A rich, creamy, ultra-smooth chocolate pie with a tender almond flour crust and a fluffy chocolate silk filling. This low-carb dessert is perfectly sweet without sugar and sets into a sliceable, bakery-style pie after chilling.
Ingredients
For the Keto Crust
- 1½ cups super-fine almond flour
- 3 tbsp butter, melted
- 2 tbsp granulated erythritol or monk fruit sweetener
- 1 tbsp unsweetened cocoa powder (optional, for a chocolate crust)
For the Chocolate Silk Filling
- 8 oz cream cheese, softened to room temperature
- 1 cup heavy whipping cream
- ½ cup powdered erythritol or monk fruit sweetener
- ½ cup unsweetened cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
- ¼ cup sugar-free chocolate chips, melted (optional, for extra richness)
Instructions
1) Make the Crust
In a small bowl, mix almond flour, melted butter, sweetener, and cocoa powder (if using) until the texture looks like wet sand.
2) Press & Set
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish (or foil tin).
Bake at 350°F (175°C) for 8–10 minutes until lightly crisp. Let it cool completely.
No-bake option: Freeze the crust for 20 minutes instead.
3) Whip the Cream
In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
4) Make the Filling Base
In another bowl, beat the softened cream cheese, powdered sweetener, cocoa powder, vanilla, and salt until completely smooth with no lumps. If using melted chocolate, mix it in now.
5) Fold Gently
Gently fold the whipped cream into the chocolate cream cheese mixture until fully combined and fluffy.
6) Fill & Chill
Pour the filling into the cooled crust and smooth the top with a spatula.
7) The Hardest Part
Refrigerate for at least 4 hours (or overnight) until firm and sliceable.
Pro Tips
- Room temperature matters: Soft cream cheese prevents a lumpy filling.
- Glossy top finish: Melt a few extra sugar-free chocolate chips with 1 tsp coconut oil and drizzle over the pie before chilling for a mirror-like shine.
- Shortcut: Use a store-bought keto pie crust if available.
Serving: Slice with a warm knife for clean edges. Optional topping: whipped cream or shaved sugar-free chocolate.
