Roasted Sausage and Veggie Bake recipe
Ingredients:
• 1 lb smoked sausage (beef, turkey, or chicken), sliced into rounds
• 1.5 lbs baby potatoes, quartered
• 1 red bell pepper, chopped
• 1 yellow bell pepper, chopped
• 1 cup broccoli florets
• 1 medium red onion, chopped
• 2 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp Italian seasoning
• Salt and black pepper to taste
• Optional: crushed red pepper flakes for a kick
Instructions:
1. Preheat oven to 400°F (200°C).
2. Prep ingredients: Slice sausage, chop vegetables, and cut potatoes into quarters.
3. Combine in a bowl or directly in a large baking pan:
• Add sausage, potatoes, bell peppers, broccoli, and onions.
• Drizzle with olive oil.
• Sprinkle garlic powder, onion powder, Italian seasoning, salt, pepper, and optional red pepper flakes.
• Toss everything until evenly coated.
4. Spread evenly on a greased or lined sheet pan or in a disposable foil tray.
5. Bake uncovered for 35–45 minutes, stirring halfway through, until the potatoes are golden and cooked through and the sausage is slightly crisped.
6. Serve hot as a hearty dinner or meal prep option
